Vanilla Extract

Ingredients

  • 5-6 vanilla beans
  • 8 ounces of 35+ proof alcohol (vodka, rum, or bourbon1)
  • 1 glass bottle with at least 8 ounces of capacity

Instructions

  1. Split vanilla beans down the middle lengthwise.
  2. Add alcohol and beans to the bottle, making sure the beans are COMPLETELY2 submerged.
  3. Place the extract in a cool, dark3 place. Shake the extract every couple of days for the first month4
1Vodka has the most neutral flavor, making it the best alcohol to let the vanilla flavor shine. However, rum or brandy can be used to create more complex flavors.
2Any exposed parts will become slimy and ruin the extract.
3Keeping the light out will help preserve the oils and flavor of the vanilla extract.
4The extract should be ready in as little as 8 weeks. But for optimal vanila flavor, you should wait at least 6+ months. The longer you age it the better.
